Warre's Otima is a range of aged tawny ports. The 10 Year Old is light and delicate with notes of toffee, honey and dried fruit and is best served slightly chilled.
Clos Laborie is a red Margaux wine from the vineyards of Château Tayac in Soussans between Bordeaux and Lesparre-Médoc. Elegant and very fine, it exudes woody aromas enhanced with ripe fruits.
The Doña Margarita Vineyard: Named after the late matriarch of the Torres family, this 20-acre vineyard, certified sustainable, is located on the Bohemian Highway, between Freestone and Occidental, in the Sonoma Coast appellation of origin. The cool breezes and drifting fog from the Pacific Ocean, six miles away, make it an ideal site for Pinot Noir. Planted in the European style of super-high density, with 2,340 vines per acre, the yields are low and labor is intensive; but the vines live longer and the grapes acquire better balance and greater concentration, as well as more elegance and finesse.
The grapes are sorted upon receipt at the winery, where the team work by gravity in order to be as respectful as possible of the natural cycle of vinification. Pascal lightly presses the grapes and only keep the first part of the juice – the purest, most precise and full of flavour.
This is the number one sparkling wine from the Bortolomiol traditional line. The Roman numeral on the bottle and the name Prior bear testament to the fact that Giuliano Bortolomiol had the intuition to create a brut Prosecco at a time when it was only ever an extra dry. Prior symbolises Giuliano’s pioneering spirit and his belief in Prosecco di Valdobbiadene (now Valdobbiadene Prosecco Superiore Docg) and in the Martinotti Charmat sparkling wine-making method with fermentation in an autoclave, also known as the Italian Method.
