Sorting of the grapes at the reception of the harvest. 100% natural vinification in temperature-controlled stainless steel vats with ageing on fine lees for 5 months.
Maceration in destemmed harvest by pumping over. This vinification favors the subtlety of the Pinot Noir and not its concentration. Aging in temperature-controlled stainless steel vats for 7 months, the absence of aging in wood develops gourmet and fruity aromas.
The juices are settled in the cold after pressing, without the use of enzymes, and then the vinification starts spontaneously thanks to indigenous yeasts. These natural vinifications reveal all the more the expression of the terroir, and the long ageing periods reveal the aromatic complexity.
