In the dry and sunny climate of the Limarí Valley (Chile) our pisco chileno is made with a single process of discontinuous distillation in a copper still. Its floral and citrus notes give Pisco El Gobernador a versatile and diverse character, ideal for the creation of numerous cocktails.
Each individual parcel was vinified separately, and remained so until the final wine was assembled. Maturation in a selection of seasoned French oak hogsheads for fifteen months provides a softness and elegance to the silky palate.
Only the very best wines reveal their secrets to truly reflect their origin. Celeste Reserva is the jewel in the crown of the Pago del Cielo wine range. This limited edition, modern-style wine is fresh and aromatic, aged for 15 months in French and American oak barrels and a minimum of 12 months in the bottle.
The wine comes from an Alentejo estate acquired by the Douro's Symington family in 2017. It is a powerfully structured wine. The tannins and the rich black fruits are laced with refreshing acidity, a sign of the estate's 1,500-foot altitude.
The wines are from an extensive vineyard in the Vilariça Valley in the Douro Superior region. Rich in tannins and with spice, it has black fruits that are now ready to drink.
